2019 Forgeron Cellars Cabernet Sauvignon
Cabernet Sauvignon flourishes in Walla Walla Valley, especially between Seven Hills Vineyard and Minnick Hills Vineyard. They complement each other so well in the bottle, enhancing the varietal profile and texture of the wine. This vintage opens with a big and full profile and softens out with a pleasing long, lengthy finish.

Our Walla Walla Valley Cabernet Sauvignon flows into your glass with a dazzling ruby red color; expanding on your nose with rich dark chocolate, cassis, and sumptuous black cherry. The multifaceted flavor profile evolves with every sip, keeping your palate entranced with each quaff. Fine, fresh tannins lead into a fruit forward mid-palate and rewarding lengthy finish. Take this wine with you to any fine dining meal that includes steak, our favorite is a nice juicy Prime Rib.
Other notes
2019 began with favorable, steady temperatures that suggested harvest would begin earlier than the prior year. However, as we were preparing to begin picking fruit in August temperatures around the state suddenly dropped, causing most of our fruit ripening to slow and bestowing advantageous added hangtime and acidity. We finished harvesting fruit just before an early freeze throughout Walla Walla Valley in October. Given our preference for fresh, vibrant winemaking, this vintage’s exceptional, gradual entrance allowed varietals across the state to truly blossom.

Notes of blackcurrants and mulberries with roasted spices and chocolate cedar. Medium- to full-bodied, sleek and polished, with tight but glossy tannins and juicy dark fruit underneath. Flavorful finish. Drink or hold.

The 2019 Cabernet Sauvignon is spicy in the glass, blending crushed raspberries with nuances of sage and wildflowers. This is a soft yet juicy stule with tart red berries and mineral tones lifted by brisk acidity. Grippy tannins are left to linger through the long and dramatic finale as nuances of blueberry and sweet herbs resonate on.

This 100% Cabernet Sauvignon rested for two years in French oak—20% new and 80% neutral. Black cherries and the waxiness of a vanilla-scented candle are the first aromas to hit the nose. The second wave features orange soda, mint and a touch of dried sage. The wine is medium bodied, with fine-grained tannins and low levels of soft acidity. Generous amounts of sweet blackcap raspberry and blueberry flavors do an easy waltz with somewhat bitter notes of raw almonds and orange pith—an easy sipper if there ever was one.

"The vineyards for this wine are Seven Hills and Minnick Hills, representing quite different parts of the Walla Walla AVA. Pure varietal, aged two years in 20% new French oak, this is showing a lot of pretty raspberry fruit with snappy acids accenting the freshness. Beyond the immediate appeal is a solidly-built wine with medium term aging potential. For Walla Walla Cabernet at such a high quality level it's a fine value."
